Lime & Coconut Panna Cotta
This elegant dessert is surprisingly simple to make and the Brookdale Lime Jelly adds a beautiful vibrant color and refreshing taste.
Ingredients:
- 250ml thickened cream
- 100ml full-fat milk
- 50g caster sugar
- 1 tsp vanilla extract
- 2 sheets (4g) gelatine
- 1 packet (85g) Brookdale Lime Jelly
- 50g desiccated coconut, for garnish
Instructions:
- Bloom the gelatine sheets in cold water for 5 minutes.
- In a saucepan, gently heat the cream, milk, and sugar until the sugar dissolves.
- Squeeze out excess water from the gelatine sheets and add them to the warm cream mixture. Stir until dissolved.
- Stir in the vanilla extract.
- Remove from heat and allow to cool slightly.
- Once cooled, stir through the dissolved Brookdale Lime Jelly.
- Divide the mixture into small serving glasses or ramekins.
- Refrigerate for at least 4 hours, or until set.
- Garnish with desiccated coconut before serving.
