Creamy Tomato & Chickpea Pasta: A Weeknight Winner!

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 ounces pasta (any shape)
  • Fresh basil, chopped (for garnish)

Instructions:

  1. Cook pasta according to package directions.
  2. While pasta cooks, heat olive oil in a large saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in crushed tomatoes, chickpeas, vegetable broth, oregano, and red pepper flakes (if using). Bring to a simmer and cook for 15 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Drain pasta and add it to the sauce. Toss to combine.
  7. Serve garnished with fresh basil.
